Menu Planning

Course Information

The purpose of this award is to equip the learner with the knowledge, skill and competence to plan and produce a range of menus, taking into account nutritional requirements, special dietary needs and current nutritional trends. 

The learner should be able to: 

  1. Describe the influences of tradition, culture and trends on food choice and menu planning
  2. Explain key nutritional influences on contemporary menu design. 
  3. Describe a range of different types and styles of menus and their uses.
  4. Describe the role of ethics in menu planning.
  5. Explain how menus and dishes are constructed, and the role of variety, balancing ingredients, flavours and textures.
  6. Describe the role of the menu as a marketing tool.

Delivery Blended Learning 2 hours per week

Note The commencement of all courses is dependent on the registration of a sufficient number of students.
